So….I took a little vacation without telling you I would. I didn’t really plan to either. Funny how I needed a vacation from our vacation. Since we’ve been home, we’ve been unpacking and lounging around, taking impulse trips to the big city and slowly getting back into some sort of rhythm of everyday life. Now we’re about to say goodbye to Daddy for two weeks as he takes some students to Honduras for a very cool adventure.
One of his favorite meals on a random weeknight, or when he’s about to leave the country and be in the wilderness for awhile, is a Croque Monsieur. It’s one of my favorites to prepare, too. It’s total comfort food, but is quick and super easy to whip up.
This uber-glorified ham and cheese sandwich was first made for us by our french friend, Marine, when she came to stay with us several summers ago (You may also recall this delicious recipe recently which also came to us from this sweet source). Sure, we’ve all had one of these sandwiches at a cute sidewalk bistro in Paris, with a demi tasse café au lait on the side, right? But this is such a wonderful make-at-home meal. I’m serious. Try it…and be sure to eat yours with a fork and a knife, the way the french do!
So, I’m sorry I had you thinking we all got eaten by a grizzly bear in Yellowstone a few weeks back by not posting for so long. As a matter of fact, our trip back was really quite smooth and we had a great visit with some friends in Texas too. No crazy stories to tell. All I have to offer is this scrumptious croque monsieur for your a nice weeknight meal that will say “Mmmm. Slow-cooked comfort food” to your tastebuds, but holler, “That was quick and easy!” to your busy schedule.
